Pad Thai

Prep Time: 30 min

Yield: Serves 4


8 Ounces Pad Thai

2 tablespoons olive oil

2 eggs

1 teaspoon fish sauce

1 1/2 table spoons soy sauce (or Ponzu for less salty)

1 lime

2 tablespoons brown sugar

1 teaspoon red pepper flakes (optional heat)

3 green onions

1/4 cilantro leaves chopped

1/4 cup salted peanuts (optional)


1. Bring large pot of water to boil, add noodles for 7 to 10 min

2. In large separate skillet heat the olive oil over medium heat and scramble in eggs till cooked (set aside)

3.In a small bowl mix in the soy sauce, fish sauce, sugar, red pepper flakes, and lime juice

4. add liquid mixture to noodles toss to coat

5.add scrambled eggs, peanuts and herbs to garnish

6. Toss lightly, and serve warm
